Zucchini grilled cheese with browned zucchini, cheddar, and mozzarella on crisp sourdough. Learn how to cook off moisture for a melty skillet sandwich.

Zucchini grilled cheese is a crisp skillet sandwich filled with browned zucchini and melted cheese, making a simple vegetable lunch from everyday ingredients. This version combines sharp cheddar for flavor with low-moisture mozzarella for a soft, stretchy melt. Cook the zucchini before it goes between the bread. A short sauté drives off excess moisture and adds golden edges; letting it steam on a plate afterward helps keep the sandwich from turning soggy. Allow about 30 minutes when both sandwiches fit in the skillet.

Equipment
- 12-inch skillet
- Chef's knife and cutting board
- Box grater
- Measuring spoons
- Plate
- Broad spatula
- Skillet lid, optional
Ingredients
- •1 medium zucchini (about 6 ounces), ends trimmed
- •1 teaspoon olive oil
- •1/8 teaspoon fine salt
- •1/8 teaspoon freshly ground black pepper
- •1/4 teaspoon garlic powder
- •4 slices sourdough bread, about 1/2 inch thick
- •2 tablespoons softened unsalted butter
- •2 ounces sharp cheddar, freshly grated (about 1/2 cup)
- •3 ounces low-moisture mozzarella, freshly grated (about 3/4 cup)
Instructions
- 1
Brown and dry the zucchini
Halve the zucchini lengthwise, then cut crosswise into half-moons about 1/8 inch thick. Pat dry. Heat the olive oil in a 12-inch skillet over medium-high heat. Add the zucchini in a mostly single layer and cook for 6–8 minutes, turning every 2 minutes, until tender with golden spots and no visible liquid pooling in the pan. Stir in the salt, pepper, and garlic powder for the final 30 seconds. Transfer to a plate, spread out, and let steam escape for 2 minutes. Take the skillet off the heat while you assemble.

Layer the sandwiches
Spread the butter evenly over one side of each bread slice. Mix the grated cheddar and mozzarella. Set two slices butter-side down on a cutting board and divide half the cheese between them. Divide the zucchini evenly over the cheese in a thin layer, leaving a small border at the edges. Add the remaining cheese and close with the other bread slices, butter-side up. Wipe any loose zucchini bits from the cooled skillet.

Grill slowly until melted
Return the skillet to medium-low heat and add both sandwiches without crowding; cook one at a time if they do not fit. Cook for 4–5 minutes on the first side, until golden brown, then flip gently with a broad spatula. Cook for another 4–5 minutes, until the second side is crisp and the cheese has melted through the center. If the bread colors before the cheese melts, lower the heat and cover for 30–60 seconds, then uncover for the final minute to crisp the bread. Rest for 1 minute before cutting and serve immediately.

Variation
- Use a medium yellow summer squash in place of the zucchini, with the same weight and slicing method. - Replace the cheddar with the same amount of Monterey Jack for a milder sandwich. - Replace garlic powder with 1 small finely minced garlic clove, stirred into the zucchini for the final 30 seconds. - Add a pinch of crushed red pepper with the other seasonings if you like heat.
Questions and answers
How do you keep zucchini grilled cheese from getting soggy?
Cook the zucchini separately until its released liquid evaporates, then spread it on a plate for 2 minutes so steam can escape. Use a thin layer of filling and low-moisture mozzarella rather than fresh mozzarella.
Should zucchini be cooked before putting it in grilled cheese?
Yes. A quick sauté softens the zucchini and removes water that would otherwise collect inside the sandwich. Thin raw slices can release moisture before the bread and cheese finish cooking.
What cheese goes well with zucchini grilled cheese?
Sharp cheddar adds flavor, while low-moisture mozzarella gives a soft melt. This recipe uses both so the mild zucchini has a savory cheese filling without relying on extra sauces.
Do I need to peel zucchini for grilled cheese?
No. Scrub it, trim the ends, and slice it thinly with the skin on. Choose a firm zucchini without a tough skin or large spongy center.
Can I use frozen zucchini in grilled cheese?
Fresh zucchini is easier to brown and keep dry for this recipe. Thawed frozen zucchini is softer and wetter; if you use it, drain and pat it dry, cook off all visible liquid, and expect a softer filling.
Can I make zucchini grilled cheese ahead of time?
You can cook the zucchini ahead, refrigerate it, and assemble the sandwiches when ready to eat. Finished sandwiches are crispest immediately after cooking; reheat leftovers in a skillet rather than a microwave.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
