Jalapeño Popper Grilled Cheese
Recipe by Grilly CheesePublished 2026-09-12Updated 2026-09-12
Make jalapeño popper grilled cheese with cream cheese, cheddar, Monterey Jack, and pickled jalapeños. Includes tips for a crisp crust and creamy filling.

Cream cheese gives this sandwich its popper-style center, while cheddar and Monterey Jack provide the melt. Pickled jalapeños add tang and adjustable heat without a separate roasting step. Blot the peppers dry and keep the filling thin so the bread crisps before the center gets too heavy.

Equipment
- 12-inch heavy skillet with lid
- Wide spatula
- Small bowl
Ingredients
- •4 slices sourdough bread, about 1/2 inch thick
- •2 tablespoons (28 g) unsalted butter, softened
- •2 ounces (57 g) full-fat cream cheese, softened
- •2 ounces (57 g) cheddar, freshly grated
- •2 ounces (57 g) Monterey Jack, freshly grated
- •2 tablespoons (about 20 g) sliced pickled jalapeños, drained, blotted dry, and chopped
- •1/4 teaspoon garlic powder
Instructions
- 1
Mix the creamy filling
Stir the cream cheese, chopped jalapeños, and garlic powder together. Mix the cheddar and Monterey Jack in a separate pile.
- 2
Butter and fill the bread
Spread the butter evenly over one side of all four bread slices. Turn two slices butter-side down. Spread half the cream cheese mixture on the inner face of each, then divide the grated cheeses between them. Close with the remaining bread, butter-side up.
- 3
Preheat the skillet
Warm a heavy skillet over medium-low heat for about 2 minutes. It should be hot enough for a gentle sizzle, without smoking.
- 4
Grill both sides
Add both sandwiches if they fit without crowding. Cook for 4–5 minutes per side, until the crust is golden and the grated cheese has melted. Cover for 30–60 seconds if the centers lag behind the crust, then uncover to finish. Lower the heat if the bread darkens too quickly.
- 5
Rest and slice
Rest on a board for 1 minute, then slice and serve while the centers are creamy.
Tips
- →Use full-fat block cream cheese; a thick layer of whipped spread makes the sandwich harder to hold together.
- →Dry the jalapeños thoroughly. Brine belongs in the jar, not in the bread.
Variation
For a milder filling, use 1 tablespoon of drained pickled jalapeños across the two sandwiches. For more heat, replace Monterey Jack with pepper Jack in the same weight.
Questions and answers
Can I use fresh jalapeños?
Yes. Seed and finely dice 1 small jalapeño, then sauté it in 1 teaspoon oil until softened, about 3–4 minutes. Let it stop steaming before mixing it into the cream cheese; allow extra preparation and cooking time.
Why is the cream cheese filling squeezing out?
The filling may be too thick or the sandwich may be pressed too hard. Spread a thin, even layer, leave a small border at the edges, and turn it with a wide spatula without flattening it.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
