White bean soup with canned cannellini beans, spinach, rosemary, and lemon. Make this easy skillet side for grilled cheese in about 35 minutes.

White bean soup is a comforting mix of tender beans, vegetables, and broth that makes a quick, satisfying side for grilled cheese. This version uses canned cannellini beans, rosemary, spinach, and a squeeze of lemon, so there is no overnight soaking or blender cleanup. Mash a small portion of the beans right in the skillet to give the broth body while leaving most of the beans whole. The result is spoonable and lightly creamy without cream. Allow about 35 minutes from chopping to serving; cook the sandwiches during the final simmer.

Equipment
- Deep 12-inch skillet, at least 3-quart capacity
- Chef's knife and cutting board
- Colander
- Measuring cups and spoons
- Wooden spoon
- Potato masher
- Ladle
Ingredients
- •2 tablespoons olive oil
- •1 medium yellow onion, finely diced (about 1 cup)
- •1 medium carrot, cut into 1/4-inch dice (about 1/2 cup)
- •1 celery stalk, cut into 1/4-inch dice (about 1/2 cup)
- •3 garlic cloves, minced
- •1/2 teaspoon dried rosemary, crushed between your fingers
- •2 cans cannellini beans (15 ounces each), drained and rinsed
- •3 cups low-sodium vegetable broth, plus up to 1/2 cup as needed
- •2 packed cups baby spinach (about 2 ounces)
- •1 tablespoon fresh lemon juice, plus more to taste
- •1/4 teaspoon fine salt, plus more to taste
- •1/4 teaspoon freshly ground black pepper
Instructions
- 1
Soften the vegetables
Heat the olive oil in a deep 12-inch skillet with at least a 3-quart capacity over medium heat. Add the onion, carrot, celery, and 1/4 teaspoon salt. Cook for 8–10 minutes, stirring often, until the onion is translucent and the carrot starts to soften; reduce the heat if the vegetables brown. Stir in the garlic and crushed rosemary and cook for 30 seconds, just until fragrant.

- 2
Simmer the beans
Add the drained beans, 3 cups vegetable broth, and black pepper. Increase the heat to medium-high just until the broth begins bubbling, about 2–3 minutes. Reduce to medium-low and simmer uncovered for 10–12 minutes, stirring occasionally, until the carrot is tender when pierced with a fork. Keep the simmer gentle rather than boiling hard.

- 3
Mash, wilt, and brighten
Reduce the heat to low. With a potato masher, gently crush roughly one-quarter of the beans directly in the skillet, leaving plenty whole. Stir in the spinach and cook for 1–2 minutes, until wilted. Turn off the heat and stir in 1 tablespoon lemon juice. Taste before adding more salt or lemon; broth saltiness varies. If the soup is thicker than you like, stir in extra broth 2 tablespoons at a time, up to 1/2 cup. Ladle into bowls and serve.

Variation
- Replace cannellini beans with the same amount of drained Great Northern beans. - Use 1 teaspoon finely chopped fresh rosemary instead of dried rosemary. - Replace the spinach with 1 packed cup finely chopped kale, tough stems removed. Add the kale for the last 5 minutes of the bean simmer so it has time to soften. - Stir a pinch of crushed red pepper into the garlic for gentle heat. - For a vegetarian finish, add grated Parmesan at the table. This changes the vegan version and adds milk.
Questions and answers
What beans are best for white bean soup?
Cannellini beans work well because their mild flavor and creamy texture suit a quick soup. Great Northern beans are a useful substitute; drain and rinse canned beans before adding them.
Can I make white bean soup with canned beans?
Yes. Canned beans are already cooked, so this recipe simmers them only long enough to flavor the broth and finish softening the vegetables. Dried beans need separate soaking and cooking instructions and cannot be added in the same quantity and timing.
How do you thicken white bean soup without cream?
Mash about one-quarter of the beans directly in the skillet and stir them into the broth. Their starch gives the soup body while most of the beans remain whole; mash more for a thicker result.
When should I add spinach to white bean soup?
Add baby spinach after the carrots are tender and the beans have simmered. It needs only 1–2 minutes over low heat to wilt, so adding it earlier can leave it overcooked.
Can you freeze white bean soup?
Yes. Cool and freeze it in individual portions for up to 2 months for best quality, leaving space in the container for expansion. Thaw in the refrigerator, then reheat gently; the beans may soften and the soup may need extra broth.
What sandwich goes with white bean soup?
A classic cheddar or American grilled cheese pairs well with the mild beans and lemony broth. Serve the soup in its own bowl to keep the sandwich crisp.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
