Sausage and peppers grilled cheese with Italian pork sausage, red bell pepper, onion, provolone, and mozzarella. Make two crisp sandwiches in one skillet.

Sausage and peppers grilled cheese cut in half with melted provolone and mozzarella

Sausage and peppers grilled cheese is a crisp skillet sandwich filled with Italian sausage, tender bell pepper, onion, and melted cheese that brings sausage-and-pepper sandwich flavor to an easy home lunch. Sweet Italian pork sausage supplies fennel and savory seasoning; red bell pepper and onion soften in the same skillet. Provolone adds flavor while low-moisture mozzarella helps hold the chopped filling together. There is no tomato sauce to soak into the bread. Prep: 10 minutes | Cook: About 28 minutes | Rest: 2 minutes | Total: About 40 minutes Active work: About 35 minutes | Servings: 2 | Yield: 2 sandwiches Use a 12-inch skillet with enough flat cooking surface for both sandwiches. The timing assumes they cook together. A smaller pan needs a second grilling batch and about 6 to 8 additional minutes.

Equipment

  • 12-inch skillet
  • Lid that fits the skillet
  • Thin-tip instant-read thermometer
  • Wide spatula
  • Cutting board
  • Knife
  • Mixing bowl
  • Measuring cups and spoons

Ingredients

  • •6 ounces (170 g) raw sweet Italian pork sausage, casings removed
  • •1 teaspoon olive oil
  • •1 cup (120 g) thinly sliced red bell pepper, cut into 2-inch strips
  • •1/4 cup (40 g) thinly sliced yellow onion
  • •1/4 teaspoon dried oregano
  • •4 slices sturdy Italian bread, about 1/2 inch thick and 4 by 5 inches each
  • •2 tablespoons (28 g) unsalted butter, softened
  • •2 slices provolone, about 1 1/2 ounces (42 g) total
  • •1/2 cup (56 g) shredded low-moisture mozzarella

Instructions

  1. 1

    Cook the filling

Shape the sausage into two 3-ounce patties about 1/2 inch thick. Heat a 12-inch skillet over medium heat for 1 minute. Cook the patties for about 4 to 5 minutes per side, until a thin-tip thermometer inserted sideways into each center reads 160°F (71°C); continue cooking if needed. Move them to a clean plate. Carefully spoon off excess fat, leaving about 1 teaspoon in the skillet. Add the olive oil, red pepper, onion, and oregano. Cook over medium heat for 8 to 10 minutes, stirring often, until tender and lightly browned. Meanwhile, chop the cooked sausage into 1/2-inch pieces on a clean board. Return it to the vegetables and stir for 1 minute. The mixture should be moist but leave no puddle when pushed aside. Move to a bowl and take the skillet off the heat.

    Layer the sandwiches

Spread the softened butter evenly over one side of all four bread slices. Place two slices butter-side down on a board. Add one slice of provolone to each, divide the warm sausage-and-pepper filling between them, and top each with 1/4 cup mozzarella. Keep the filling in an even layer within the bread edges. Close with the remaining bread slices, butter-side up. Carefully wipe the skillet free of browned crumbs and excess grease.

    Grill and rest

Return the skillet to medium-low heat. Add both sandwiches side by side without crowding. Cook for 3 to 4 minutes on the first side, then turn carefully with a wide spatula and cook for 3 to 4 minutes more, until both sides are golden and the cheese is melted. If the bread browns before the cheese melts, reduce the heat and cover for 30 to 60 seconds, then uncover to crisp. Move to a board, rest for 2 minutes, and cut in half. Timing assumes both sandwiches fit in the skillet; cook separately if needed.

Variation

- Green or yellow pepper: Use the same measured amount in place of red pepper. Green pepper has a less sweet flavor. - All provolone: Replace the mozzarella with 2 ounces of thinly sliced or shredded mild provolone, dividing it between the sandwich tops. - Sourdough: Use similarly sized, moderately thick slices. Very thick bread takes longer to heat through. - Chicken or turkey Italian sausage: Use the same weight, but cook raw poultry sausage to 165°F (74°C), not the pork temperature. Check its label and allow additional cooking time as needed. - Fully cooked sausage: Chop 6 ounces and heat according to its package directions before combining with the vegetables. This changes the cooking time, so use the package rather than the raw-patty timing. The base recipe is made without sauce. If you enjoy marinara, serve a small warmed portion separately for dipping.

Questions and answers

What cheese goes best with sausage and peppers grilled cheese?

Mild provolone and low-moisture mozzarella work well together: provolone adds flavor and mozzarella melts into the chopped filling. Avoid wet fresh mozzarella here because extra liquid can soften the bread.

Do I cook the sausage before putting it in grilled cheese?

Yes. Cook the pork sausage fully to 160°F (71°C), then chop it and combine it with the cooked vegetables before assembling. The final grilling step melts cheese and crisps bread; it should not be used to cook raw sausage hidden inside.

Can I use hot Italian sausage instead of sweet Italian sausage?

Yes, use the same amount of raw hot Italian pork sausage. The method and 160°F (71°C) minimum internal temperature remain the same.

How do I keep sausage and peppers grilled cheese from getting soggy?

Cook the vegetables until tender and any released liquid evaporates, remove pooled sausage fat, and use low-moisture cheese. Keep the filling in an even layer and avoid adding sauce inside the sandwich.

Can I make the sausage and pepper filling ahead?

Yes. Refrigerate the cooked filling promptly in a covered container, then reheat it to 165°F (74°C) before building the sandwiches. Use refrigerated cooked filling within 3 to 4 days and keep track of the day it was first cooked.

Why is my bread burning before the cheese melts?

The skillet is too hot for the sandwich thickness, or the filling started cold. Use warm filling and medium-low heat; if needed, cover briefly over reduced heat, then uncover so the bread can crisp again.

Storage and reheating

Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
