Roasted red pepper soup with jarred peppers, potato, and a little milk. A smooth skillet soup with about 25 minutes of active work that pairs with grilled cheese.

Roasted red pepper soup blended smooth in an ivory bowl, ready to serve with grilled cheese.

Roasted red pepper soup is a smooth, savory soup made from sweet roasted peppers that gives grilled cheese a colorful, gently smoky dipping partner. Jarred peppers make this version practical for everyday cooking, while a small potato adds body without flour or heavy cream. The peppers are already roasted, so the skillet only needs to soften the onion and potato before blending. A little milk rounds out the tang of the jarred peppers without covering up their flavor. Makes: about 6 cups, or 4 side-dish servings. Time: about 25 minutes of active work and 60 minutes total, including approximately 15 minutes for the soup to cool before blending. Cooling may take longer depending on the bowl and kitchen temperature.

Equipment

  • Deep 12-inch skillet or sauté pan with at least 4-quart capacity
  • Countertop blender rated for warm liquids
  • Heatproof bowl and ladle
  • Cutting board and knife
  • Measuring cups and spoons

Ingredients

  • •2 tablespoons olive oil
  • •1 medium yellow onion, finely diced, about 1 cup
  • •3 garlic cloves, minced
  • •1/2 teaspoon smoked paprika
  • •12 ounces drained jarred roasted red bell peppers, roughly chopped, about 2 cups
  • •8 ounces yellow potato, peeled and cut into 1/2-inch cubes
  • •3 cups low-sodium vegetable broth
  • •1/4 teaspoon fine salt, plus more to taste
  • •1/4 teaspoon ground black pepper
  • •1/2 cup whole milk

Instructions

  1. 1

Soften the onion and warm the peppers

Heat the olive oil in a deep 12-inch skillet with at least 4-quart capacity over medium heat. Add the onion and cook for 5–6 minutes, stirring often, until soft without browning. Stir in the garlic and smoked paprika for 30 seconds. Add the drained chopped roasted peppers and cook for 2 minutes, stirring.

    Simmer the potato until soft

Add the potato, vegetable broth, salt, and black pepper. Bring to a simmer over medium-high heat, allowing about 3–4 minutes, then reduce to medium-low. Simmer uncovered for 12–15 minutes, stirring occasionally, until the potato cubes crush easily against the pan with a spoon. Remove from the heat and transfer to a heatproof bowl. Let cool for about 15 minutes, or longer as needed, until warm rather than hot before blending.

Blend smooth and finish with milk

Use a blender rated for warm liquids and follow its manufacturer's venting instructions; never use a sealed personal blender for warm soup. Blend the warm soup in small batches, filling the jar no more than halfway, until smooth. Return the blended soup to the skillet and stir in the milk. Heat over medium-low for 2–3 minutes, stirring, until hot throughout without boiling hard. Taste, adjust the salt and pepper, and serve.

Variation

- Milk: Use the same amount of unsweetened oat milk for a dairy-free version. Check that the broth and remaining ingredients also meet your needs. - Paprika: Sweet paprika gives a milder flavor if you do not want smoke. - Potato: A peeled russet potato works at the same weight and cube size; blend only until smooth. - Freshly roasted peppers: Substitute the same drained weight of peeled, seeded roasted red bell peppers. Roasting and peeling them adds time and is not included in this recipe's timing.

Questions and answers

Can you make roasted red pepper soup with jarred peppers?

Yes. Use plain jarred roasted red bell peppers and measure them after draining. They are already cooked, so there is no need to roast them again.

Do you need tomatoes for red pepper soup?

No. This recipe uses roasted peppers, onion, potato, and vegetable broth for its base. The peppers provide both the color and the main flavor.

How do you thicken roasted red pepper soup without cream?

Simmer a small peeled potato in the broth until soft, then blend it into the soup. It adds body without a flour roux or heavy cream.

Why does my roasted red pepper soup taste sour?

Some jarred peppers contain a strongly acidic packing liquid. Drain them well, rinse briefly if they taste very vinegary, and use the measured milk to soften the finished flavor.

Is roasted red pepper soup spicy?

This version is mild because it uses sweet bell peppers and smoked paprika rather than hot peppers. Check that the jar contains sweet roasted peppers.

What cheese sandwich goes with roasted red pepper soup?

A classic cheddar grilled cheese pairs well with the sweet peppers and smoky paprika. A simple cheese filling lets the soup's flavor come through.

Storage and reheating

Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
