Meatball grilled cheese with sliced cooked meatballs, marinara, mozzarella, and provolone on garlic-buttered bread. Make two crisp skillet sandwiches in about 30 minutes.

Meatball grilled cheese cut in half with sliced meatballs, marinara, and melted white cheese

Meatball grilled cheese is a crisp skillet sandwich with sliced meatballs, marinara, and melted cheese that turns fully cooked meatballs into an easy lunch. Garlic-oregano butter gives the bread a savory crust, provolone adds flavor, and mozzarella melts around the meatball slices. Warming the filling separately and reducing loose sauce help the center heat through while keeping the bread crisp. Prep: 10 minutes | Cook: About 18 minutes | Rest: 2 minutes | Total: About 30 minutes Active work: About 25 minutes | Servings: 2 | Yield: 2 sandwiches Timing starts with refrigerated, fully cooked meatballs. Thaw frozen cooked meatballs in the refrigerator before beginning. The recipe assumes both sandwiches fit side by side in a 12-inch skillet; a smaller pan requires a second grilling batch and about 6 to 8 extra minutes.

Equipment

  • 12-inch skillet
  • Lid that fits the skillet
  • Thin-tip food thermometer
  • Wide spatula
  • Spoon
  • Small bowl
  • Bowl for filling
  • Cutting board
  • Knife
  • Measuring cups and spoons

Ingredients

  • •6 ounces (170 g) refrigerated fully cooked beef meatballs, sliced about 1/4 inch thick
  • •1/4 cup (60 g) thick marinara sauce
  • •1 tablespoon water, plus 1 teaspoon at a time only if needed
  • •2 tablespoons (28 g) unsalted butter, softened
  • •1/4 teaspoon garlic powder
  • •1/4 teaspoon dried oregano
  • •4 slices sturdy Italian bread, about 1/2 inch thick and 4 by 5 inches each
  • •2 thin slices provolone, about 1 ounce (28 g) total
  • •3 ounces (85 g) shredded low-moisture mozzarella (about 3/4 cup)

Instructions

  1. 1

    Warm and thicken the meatballs

Place the sliced fully cooked meatballs, marinara, and 1 tablespoon water in a 12-inch skillet over medium-low heat. Cover and heat for about 6 to 8 minutes, turning the slices gently, until the meatballs reach 165°F (74°C) throughout in several places with a thin-tip food thermometer. Add water 1 teaspoon at a time only if the sauce sticks before the meat is hot. Uncover and simmer for 1 to 2 minutes, until the sauce coats the slices without a watery puddle. Transfer to a bowl and take the skillet off the heat.

    Layer the sandwiches

Mix the softened butter with the garlic powder and oregano, then spread it evenly over one side of all four bread slices. Place two slices butter-side down on a board. Add one slice of provolone to each, divide the warm meatball slices and their thick sauce between them in a flat layer, and top each with half the mozzarella. Keep the filling within the bread edges and close with the remaining slices, butter-side up. Carefully wipe sauce residue from the skillet.

    Grill and rest

Return the skillet to medium-low heat. Add both sandwiches without crowding and cook for 3 to 4 minutes per side, turning carefully with a wide spatula, until golden and the cheese has melted. Lower the heat if the garlic butter browns too quickly. Cover for 30 to 60 seconds if needed to help the cheese melt, then uncover to crisp the bread. Transfer to a board, rest for 2 minutes, and cut in half.

Variation

- Cooked turkey or chicken meatballs: Use the same weight and heat to 165°F (74°C) throughout. Check their package directions. - Already-sauced meatballs: Measure 6 ounces of meatballs with most loose sauce left behind, then add only enough thick sauce to coat them. Omit the separate marinara if the meatballs are already well coated. - Cheese: Monterey Jack can replace the mozzarella by weight; mild provolone can be used for both cheese layers. - Bread: Use similarly sized sourdough instead of Italian bread. Avoid unusually thick slices. - Butter seasoning: Omit the oregano if you prefer plain garlic butter. Do not replace garlic powder with large pieces of fresh garlic, which can scorch on the bread. Raw meatballs require a separate cooking method and additional time. This recipe's warming step is designed for meatballs that are already fully cooked.

Questions and answers

What cheese is best for meatball grilled cheese?

Low-moisture mozzarella melts around the meatball slices, while provolone adds a little more flavor. Use thin slices and shredded cheese so they melt readily.

Can I use frozen meatballs for grilled cheese?

Yes, if they are labeled fully cooked. Thaw them in the refrigerator before slicing and follow package guidance; the stated timing assumes refrigerated, thawed meatballs.

Should I slice or smash the meatballs?

Slice them about 1/4 inch thick for a level layer that stays recognizable and is easy to turn. Gently breaking a few fragile slices is fine, but avoid stacking whole meatballs.

How do I keep a meatball grilled cheese from getting soggy?

Use thick marinara sparingly, reduce loose liquid, and put cheese on both sides of the meatball layer. Serve extra sauce separately rather than pouring it into the sandwich.

Can I use leftover homemade meatballs?

Yes, if they have been stored safely and are still within their refrigerated storage window. Heat the slices to 165°F (74°C) throughout before assembling the sandwiches.

Can I make meatball grilled cheese ahead of time?

You can slice the meatballs and grate the cheese ahead, keeping them covered and refrigerated. Warm the filling and grill close to serving for the best bread texture.

Storage and reheating

Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
