This mushroom spinach grilled cheese layers deeply browned mushrooms with cumin, ginger, garlic, garam masala, turmeric, wilted spinach, cilantro, mozzarella, and Monterey Jack. The flavor profile is inspired by Indian spice layering and spinach-based dishes, but the sandwich itself is a modern grilled-cheese adaptation rather than a traditional Indian preparation.

Ingredients
- •4 slices sturdy sourdough bread
- •1 tablespoon neutral oil
- •8 ounces cremini mushrooms, sliced
- •1/2 teaspoon cumin seeds
- •1 teaspoon finely grated fresh ginger
- •1 small garlic clove, finely grated
- •1/2 teaspoon garam masala
- •1/4 teaspoon ground turmeric
- •1/4 teaspoon kosher salt
- •2 packed cups baby spinach
- •1 teaspoon fresh lemon juice
- •1 tablespoon chopped fresh cilantro
- •4 ounces low-moisture mozzarella, shredded
- •3 ounces Monterey Jack cheese, shredded
- •2 tablespoons softened unsalted butter

Step 1
Heat the neutral oil in a wide skillet over medium-high heat. Add the mushrooms in an even layer and cook for 4 to 5 minutes with minimal stirring, until deeply browned.

Reduce the heat to medium. Add the cumin seeds and cook for 20 seconds, then stir in the ginger, garlic, garam masala, turmeric, and salt. Cook for 30 seconds, just until fragrant.

Add the spinach and cook for 1 to 2 minutes, stirring, until wilted. Continue cooking until the skillet is dry, then stir in the lemon juice and cilantro. Remove from the heat.

Lay out the bread. Divide half of the mozzarella and Monterey Jack between two slices. Top evenly with the spiced mushroom-spinach mixture, then add the remaining cheese. Close with the remaining bread.

Spread the outside of each sandwich evenly with softened butter.

Heat a clean heavy skillet over medium-low heat. Cook the sandwiches for 3 to 4 minutes per side, pressing gently, until the sourdough is deeply golden and the cheese is completely melted.

Tips
- →Brown the mushrooms before adding the spices. If the pan is crowded or stirred constantly, the mushrooms will steam instead of developing savory depth.
- →Bloom the cumin, ginger, garlic, garam masala, and turmeric briefly after the mushrooms brown; prolonged high heat can make the spices taste harsh.
- →Cook the spinach until the skillet is dry before assembling the sandwiches. Excess moisture will soften the bread.
- →Low-moisture mozzarella supplies stretch, while Monterey Jack gives the filling a smooth, creamy melt without competing with the spices.
- →Add lemon and cilantro after the spinach has cooked down so their brighter flavors stay noticeable.
- →Keep the final skillet at medium-low heat so the cheese melts completely before the sourdough gets too dark.
Variation
- Cremini mushrooms: White button mushrooms or sliced shiitake mushrooms. - Monterey Jack: Muenster. - Mozzarella: Mild provolone. - Baby spinach: Chopped Swiss chard leaves, cooked until dry. - Fresh cilantro: Flat-leaf parsley if cilantro is not preferred. - Sourdough: Sturdy country white or multigrain bread.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust.
