Curry ketchup is a sweet-tangy tomato dipping sauce seasoned with curry spices that gives grilled cheese strips and fries a warm, savory finish. This skillet version starts with bottled ketchup, then adds mild curry powder, paprika, cider vinegar, and a little brown sugar. Briefly warming the spices in oil helps distribute their flavor, and a short simmer brings the sauce together. It is a German-inspired home version with a smooth dipping texture. Makes: about 1 cup, or 8 servings of about 2 tablespoons. Prep: 5 minutes. Cook: 8 minutes. Cool: 10 minutes. Total: about 23 minutes, with 13 minutes of active work. Additional chilling time is needed only if you want to serve it cold.

Equipment

  • Measuring cups and spoons
  • Small 8-inch skillet
  • Silicone spatula
  • Heatproof serving bowl
  • Spoon

Ingredients

  • •1 teaspoon neutral oil, such as canola
  • •1 1/2 teaspoons mild curry powder: Use a blend you enjoy. Heat and seasoning vary between brands.
  • •1/2 teaspoon sweet paprika
  • •1/4 teaspoon onion powder
  • •1 cup (240 ml) tomato ketchup: A familiar smooth ketchup works well.
  • •2 tablespoons water, plus more by the teaspoon if needed
  • •1 tablespoon apple cider vinegar
  • •1 teaspoon packed light brown sugar

Instructions

  1. 1

    Bloom the spices

Measure all ingredients before heating the pan. Warm the oil in a small 8-inch skillet over low heat. Add the curry powder, paprika, and onion powder and stir for 15–20 seconds, just until fragrant. Keep the heat low and add the ketchup promptly so the powdered spices do not scorch.

    Simmer the sauce

Stir in the ketchup, water, cider vinegar, and brown sugar until smooth. Bring to a gentle simmer over medium-low heat, then reduce to low. Cook for 5–6 minutes, stirring often and scraping the bottom, until glossy and thick enough to coat a spoon. If it tightens before the timer is up, add water 1 teaspoon at a time. Allow about 8 minutes for the full heating and cooking sequence.

    Cool briefly and serve

Transfer to a heatproof serving bowl and let cool for 10 minutes, then stir. Serve warm as a dip alongside grilled cheese strips or fries. For a cold dip, refrigerate promptly in a covered container until chilled; chilling time is additional.

Cool briefly and serve: Curry Ketchup

Tips

  • →Have the ketchup measured before starting. The small amount of oil and powdered spices can scorch if left waiting.
  • →Keep the simmer gentle; thick tomato sauce can splatter when boiled hard.
  • →Stir along the bottom and into the corners of the skillet.
  • →Stop when the sauce coats a spoon. It thickens a little more as it cools.
  • →If your curry powder is hot, begin with 1 teaspoon and add more after tasting.
  • →Serve a little at a time so crumbs from sandwiches or fries do not enter the stored batch.

Variation

Smoked paprika: Use the same amount in place of sweet paprika for a smoky version. White vinegar: Substitute the same volume of distilled white vinegar for a sharper tang. Less sweet: Omit the brown sugar if your ketchup already tastes sweet enough. Keep the rest of the method the same. Hotter dip: Stir in a small pinch of cayenne after simmering, then taste before adding more.

Questions and answers

What is curry ketchup?

It is ketchup seasoned with curry spices, usually served as a sauce or dip. This version adds paprika, onion powder, cider vinegar, and a little brown sugar to a bottled ketchup base.

Can you make curry ketchup with regular ketchup?

Yes. Smooth bottled tomato ketchup is the base of this recipe. Use one you like, since its sweetness and acidity shape the finished sauce.

Is curry ketchup spicy?

This version is mild when made with mild curry powder. Curry blends vary, so check the blend and start with a little less if you are unsure of its heat.

What can you dip in curry ketchup?

Grilled cheese strips, fries, home fries, and potato wedges all pair well with it. Serve it in a separate bowl and dip each bite just before eating.

Should curry ketchup be served hot or cold?

It can be served warm after a brief cooling period or chilled from the refrigerator. The warm version is a little looser, while the chilled sauce is thicker.

How do you thin curry ketchup?

Stir in water 1 teaspoon at a time until it reaches the texture you want. Add gradually because a dipping sauce should still cling to the food.

Storage and reheating

Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
