Cream of celery soup with finely diced celery, onion, milk, and a little cream. Make this lightly chunky skillet soup as a comforting side for grilled cheese.

Cream of celery soup is a mild, creamy vegetable soup that turns everyday celery into a comforting partner for grilled cheese. This version keeps small, tender pieces of celery and onion in a lightly thickened broth, so there is no blender step. A little flour gives the soup body, whole milk keeps it pourable, and a small amount of cream rounds out the finish. Chop the vegetables finely and let the celery become tender before adding the dairy. Plan on about 40 minutes from chopping to serving.

Equipment
- Deep 12-inch skillet, at least 3-quart capacity
- Chef's knife and cutting board
- Measuring cups and spoons
- Wooden spoon
- Ladle
Ingredients
- •2 tablespoons unsalted butter
- •3 cups finely diced celery (about 10 ounces; 1/4-inch pieces)
- •1/2 cup finely diced yellow onion (about 1/2 medium onion)
- •1/4 teaspoon fine salt, plus more to taste
- •2 tablespoons all-purpose flour
- •2 cups low-sodium vegetable broth
- •1/4 teaspoon dried thyme
- •1 cup whole milk, plus more as needed for thinning
- •1/4 cup heavy cream
- •1/8 teaspoon freshly ground black pepper
Instructions
- 1
Soften the celery and onion
Melt the butter in a deep 12-inch skillet with at least a 3-quart capacity over medium-low heat. Add the celery, onion, and salt. Cook for 8–10 minutes, stirring often, until the onion is translucent and the celery begins to soften. Keep the vegetables pale; lower the heat if they start browning.

- 2
Thicken and simmer the broth
Sprinkle the flour over the vegetables and stir constantly for 1 minute. Add the broth gradually, stirring well after each addition to prevent flour lumps. Add the thyme. Raise the heat to medium just until the soup reaches a gentle simmer, then reduce to medium-low. Simmer uncovered for 10–12 minutes, stirring occasionally, until the celery is tender with no firm crunch. If needed, cook a few minutes longer before adding dairy.

- 3
Finish gently with milk and cream
Reduce the heat to low and stir in the milk, followed by the cream and black pepper. Heat gently for 2–3 minutes, stirring, until steaming throughout; do not bring to a hard boil. Taste and adjust the salt. The soup should lightly coat a spoon while remaining pourable, with small tender celery pieces. If it is thicker than you like, stir in a little extra milk, 1 tablespoon at a time. Ladle into bowls and serve.

Variation
- Replace the heavy cream with 1/4 cup additional whole milk for a lighter, less rich soup. - Use 1/2 teaspoon chopped fresh thyme instead of dried. - Replace black pepper with a small pinch of white pepper if you prefer a lighter appearance. - For a smoother eating texture without blending, dice the celery closer to 1/8 inch and check tenderness during the simmer.
Questions and answers
What is cream of celery soup made of?
This version uses celery, onion, butter, flour, vegetable broth, milk, cream, thyme, salt, and pepper. The flour thickens the broth while the milk and cream give it a soft, creamy finish.
Do I need a blender for cream of celery soup?
No. This recipe is intentionally lightly chunky, with finely diced tender celery and onion. It is not a completely smooth puree.
How do you keep celery soup from being stringy?
Trim tough celery ends and pull off especially coarse outer fibers before cutting. Fine, even dice and enough simmering time help the pieces become tender.
Can I make cream of celery soup without heavy cream?
Yes. Replace the 1/4 cup heavy cream with the same amount of whole milk. The soup will still have body from the flour, but it will taste less rich.
Is this the same as condensed cream of celery soup?
No. This is a ready-to-eat soup with a pourable consistency. It is not designed as a direct one-for-one replacement for undiluted condensed soup in a casserole.
Can I freeze cream of celery soup?
Freezing the finished dairy-based soup may cause separation and softer vegetables. For better texture, freeze the cooked celery-broth base before adding milk and cream, then thaw, reheat, and finish with the dairy.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
