Chicken bacon ranch grilled cheese with cooked chicken, crisp bacon, cheddar, and Monterey Jack. Make two golden skillet sandwiches with a tidy, creamy filling.

Chicken bacon ranch grilled cheese is a crisp skillet sandwich filled with cooked chicken, crunchy bacon, creamy ranch, and melted cheese, making a hearty lunch from a small amount of leftover chicken. The filling uses just enough ranch to coat the chicken without turning it into a loose salad. Cheddar brings a sharper flavor, Monterey Jack melts smoothly, and cheese on both sides helps hold the chopped filling together. Warming the chicken before assembly makes it easier to melt the center without over-browning the bread. Makes: 2 sandwiches. Prep: 10 minutes. Cook: about 26 minutes. Rest: 1 minute. Total: about 37 minutes. Active work: about 36 minutes. Start with fully cooked chicken; cooking raw chicken is not included in these times. A 12-inch skillet should hold both sandwiches. A smaller pan requires another grilling batch.

Equipment
- 12-inch skillet with lid
- Cutting board and sharp knife
- Measuring spoons
- Kitchen scale or measuring cup
- Tongs
- Flexible spatula
- Thin-tip instant-read food thermometer
- Heatproof bowl
- Heatproof container for bacon fat
- Plate
- Paper towels
- Butter knife
Ingredients
- •4 slices regular-cut bacon (about 4 ounces / 115 g raw)
- •4 ounces (115 g) fully cooked boneless, skinless chicken, chopped small; about 3/4 cup
- •1 tablespoon water, plus a little more if needed for warming the chicken
- •2 tablespoons thick bottled ranch dressing
- •4 slices sourdough bread, about 1/2 inch thick
- •2 tablespoons softened unsalted butter
- •2 ounces (55 g) sharp cheddar, thinly sliced
- •2 ounces (55 g) Monterey Jack, thinly sliced
Instructions
- 1
Crisp the bacon and warm the chicken
Arrange the bacon in a cold 12-inch skillet. Set over medium heat and cook for 10–12 minutes, turning as needed, until fully cooked and crisp; follow the package directions if they require longer. Transfer to a paper-towel-lined plate. Carefully pour the rendered fat into a heatproof container and wipe the skillet with a paper towel held in tongs. Add the fully cooked chopped chicken and 1 tablespoon water. Cover and warm over medium-low heat for about 3 minutes, stirring once, until the chicken reaches 165°F in several places with a thin-tip food thermometer. Add a little more water if the pan dries before the chicken is hot. Uncover and stir for about 1 minute to evaporate any loose liquid, then transfer the chicken to a heatproof bowl.

- 2
Mix and layer the filling
Break the cooked bacon into small pieces and stir it into the warm chicken with the ranch dressing. Butter one side of each bread slice. Place two slices butter-side down on a clean board. Top each with 1 ounce cheddar, half the chicken-bacon-ranch mixture, and 1 ounce Monterey Jack. Spread the filling evenly and keep it inside the bread edges. Close with the remaining bread, butter-side out.

- 3
Grill until golden
Wipe the skillet if needed and set over medium-low heat. Add both sandwiches and cook for 4–5 minutes per side, flipping carefully, until the bread is golden and the cheese has melted. Lower the heat if the crust colors too quickly. Transfer to a board, rest for 1 minute, then cut and serve. Allow about 26 minutes total cooking time for the bacon, chicken warming, and sandwich grilling; thick-cut bacon or a smaller skillet will need longer.

Tips
- →Chop the chicken into small bite-size pieces rather than leaving long, stringy shreds. This helps keep the filling from pulling out as you bite.
- →Check the warmed chicken with a thin-tip thermometer in several places. Gather it into a mound if necessary so the probe sits in the food rather than touching the pan.
- →Add the ranch after warming the chicken and removing excess liquid. There is no need to simmer the dressing in the skillet.
- →Keep loose filling away from the bread edges and flip with a wide spatula. A light touch keeps the filling in place without squeezing out the cheese.
- →If the bread is browning too fast, reduce the heat. The goal is melted cheese with a golden crust, rather than a dark crust around a cool center.
Variation
Chicken: Use chopped fully cooked turkey in the same amount if desired. It makes a turkey variation and still needs the same careful reheating step. Cheese: Mild cheddar can replace sharp cheddar; low-moisture mozzarella can replace Monterey Jack. Keep the total cheese at 4 ounces for two sandwiches. Bread: Sturdy white or whole-wheat sandwich bread works if the slices are a similar size and thickness. Very thick bread may brown before the cheese melts. Bacon: Fully cooked bacon can save time; crisp or warm it according to its package directions. Turkey bacon has different cooking instructions and changes the flavor and texture. Ranch: Use the same amount of a thick homemade ranch dressing if you already have it. Preparing a separate dressing is not included in the recipe time.
Questions and answers
What cheese is best for chicken bacon ranch grilled cheese?
Sharp cheddar and Monterey Jack give a useful balance of flavor and melt. Thinly sliced mild cheddar or low-moisture mozzarella can also work in the same total amount.
Can I use rotisserie chicken for chicken bacon ranch grilled cheese?
Yes. Remove the skin and bones, chop the meat small, and measure 4 ounces for two sandwiches. Warm the cooked chicken to 165°F before mixing it with the bacon and ranch.
How do you keep chicken grilled cheese from getting soggy?
Evaporate any water used to warm the chicken, use thick ranch sparingly, and place the filling between cheese layers. Serve soon after grilling for the crispest bread.
Should you cook bacon before putting it in grilled cheese?
Yes. Fully cook the bacon until crisp before adding it to this sandwich. The sandwich grilling time is meant to brown the bread and melt the cheese, rather than cook raw bacon inside the filling.
Can you put ranch dressing inside grilled cheese?
Yes. Stir a small amount of thick ranch into the chicken and bacon before layering the sandwich. Two tablespoons for two sandwiches coats the filling without making it runny.
Can I make chicken bacon ranch grilled cheese ahead of time?
You can cook the bacon and prepare the chicken ahead, then refrigerate them promptly in separate covered containers. Warm the chicken and assemble just before grilling for the best texture, keeping the original cooked-food storage dates in mind.
Storage and reheating
Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
