Avocado grilled cheese with a creamy lime-avocado filling, cheddar, and Monterey Jack on crisp sourdough. An easy skillet sandwich with tips for a tidy, melty center.

Avocado grilled cheese with a pale green avocado layer and melted cheddar and Monterey Jack on golden sourdough.

Avocado grilled cheese is a crisp skillet sandwich with creamy avocado and melted cheese, giving a simple lunch a soft, rich center and a golden crust. This version adds a little lime to the avocado and combines sharp cheddar with Monterey Jack for flavor and an even melt. Lightly mash the avocado so it spreads into a thin layer. Cheese above and below the filling helps keep the sandwich together as you turn it. Makes: 2 sandwiches. Time: 7 minutes prep, about 10 minutes cooking, and 1 minute resting, for about 18 minutes total when both sandwiches fit in the pan. A second batch adds 8–10 minutes.

Equipment

  • 12-inch skillet or griddle
  • Wide spatula
  • Small bowl and fork
  • Box grater
  • Cutting board and knife

Ingredients

  • •1 medium ripe avocado, yielding about 120 grams flesh, or about 1/2 cup mashed
  • •1 teaspoon fresh lime juice
  • •1/8 teaspoon fine salt
  • •1/8 teaspoon ground black pepper
  • •4 slices sourdough bread, about 1/2 inch thick
  • •2 tablespoons unsalted butter, softened
  • •2 ounces sharp cheddar, freshly grated, about 1/2 cup
  • •2 ounces Monterey Jack, freshly grated, about 1/2 cup

Instructions

  1. 1

    Mash and season the avocado

Scoop the avocado flesh into a small bowl. Add the lime juice, salt, and pepper. Mash with a fork until spreadable but still slightly chunky. Aim for about 1/2 cup filling; if the avocado is unusually large, reserve the extra for another use.

    Build a thin avocado layer

Mix the grated cheddar and Monterey Jack. Spread the butter evenly over one side of all four bread slices. Place two slices buttered-side down on a board. Divide half the mixed cheese between them. Spoon half the avocado filling onto each, spreading it gently into a thin layer and leaving a 1/2-inch border. Divide the remaining cheese over the avocado, then close with the remaining bread, buttered-side out.

    Grill gently and let settle

Heat a 12-inch skillet over medium-low heat. Add both sandwiches if they fit without crowding. Cook for 4–5 minutes per side until golden on both sides, the cheese has melted, and the avocado layer is warm. Turn carefully with a wide spatula and press only lightly after turning. Lower the heat if the bread browns before the cheese melts. Transfer to a board, rest for 1 minute, then cut and serve. If cooking one sandwich at a time, allow an extra 8–10 minutes for the second batch.

Variation

- Cheese: Use 4 ounces of mild cheddar or Monterey Jack in place of the two-cheese mix. - Citrus: Substitute the same amount of lemon juice for the lime. - Bread: Sturdy whole-wheat or white sandwich bread works at a similar thickness. - Heat: Mix a small pinch of red pepper flakes into the avocado if you want a little spice.

Questions and answers

What cheese goes best with avocado grilled cheese?

Sharp cheddar and Monterey Jack make a useful pair: cheddar adds a savory contrast to avocado, and Jack melts softly. You can also use either cheese on its own.

Should I mash or slice avocado for grilled cheese?

A light mash spreads evenly and stays in place more easily when you turn the sandwich. Keep a little texture and limit the filling to about 1/4 cup per sandwich.

Does avocado need to be cooked before making grilled cheese?

No. Use ripe avocado directly in the filling. It warms during grilling while the cheese melts.

How do I keep avocado grilled cheese from getting soggy?

Use a thin avocado layer, measure the lime juice, and keep the outside of the bread evenly buttered. Avoid adding watery ingredients to the filling.

Can I make avocado grilled cheese ahead of time?

It is best assembled and grilled just before serving. You can grate the cheese ahead, but mash the avocado close to cooking for the freshest color and texture.

Is avocado grilled cheese vegetarian?

It can be vegetarian when the cheddar and Monterey Jack use vegetarian-friendly enzymes. Check the cheese labels or ask the manufacturer if that matters for your diet.

Storage and reheating

Grilled cheese is best eaten right away. Refrigerate leftovers promptly in a covered, shallow container at 40°F (4°C) or below, within 2 hours of cooking—or within 1 hour when the temperature is above 90°F (32°C). Use within 3–4 days. Reheat to 165°F (74°C), checking the center with a food thermometer. A skillet over low heat, briefly covered and then uncovered, can warm the center and help restore the crust. If using previously cooked chicken or other leftovers, count storage time from when that ingredient was first cooked. See USDA leftovers guidance and FoodSafety.gov minimum temperatures.
