Pop-Up Station
Also called: Action station · Chef-attended station
A portable, indoor-friendly catering setup where a chef cooks and plates live from a folding station — no truck required.
A pop-up station is the indoor-compatible cousin of food truck catering. The chef brings a portable cooking rig (induction burners, panini presses, or sandwich grills), a folding chef station with branded signage, and all serving equipment. It works inside ballrooms, lofts, hotels, and offices where a food truck cannot fit. Service throughput is roughly the same as a truck for compact menus like grilled cheese or sliders. Pop-up stations are the standard answer when a client loves the food-truck experience but the venue is indoor-only.
